Cozy Chicken and White Bean Soup

Comforting, filling, and gentle for GLP-1, which slows digestion.

Ingredients (4 servings):

1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
2 carrots, sliced thin
1 celery stalk, chopped
1 can of white beans, drained and rinsed
2 cups cooked, shredded chicken
4 cups low-sodium chicken broth
1 tsp rosemary
1 tsp thyme
1 bay leaf
Salt & pepper


Instructions:
Sauté onion, garlic, carrots, and celery for 5–6 minutes.
Add beans, chicken, broth, and seasonings.
Simmer 15–20 minutes.
Remove bay leaf and serve warm.
