Lean Beef & Cabbage Stir Fry

Ingredients

  • 1.5 lbs 90–93% lean ground beef

  • 5 cups shredded green cabbage

  • 1 cup shredded carrots

  • 1 red bell pepper, sliced

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tbsp low-sodium soy sauce or coconut aminos

  • Salt & pepper

Instructions

  1. Heat olive oil in large skillet over medium-high heat.

  2. Add garlic; sauté 30 seconds.

  3. Brown ground beef 6–8 minutes. Drain excess fat if needed.

  4. Add cabbage, carrots, and bell pepper.

  5. Stir fry 5–7 minutes until vegetables soften but remain slightly crisp.

  6. Stir in soy sauce, season to taste.

  7. Divide evenly into containers.
