Mediterranean Chicken Power Bowls

Ingredients

  • 2 lbs boneless skinless chicken breast

  • 4 cups fresh spinach

  • 1 cup cherry tomatoes, halved

  • 1 large cucumber, diced

  • ½ small red onion, thinly sliced

  • 1 tbsp olive oil

  • Juice of 1 lemon

  • 1 tsp dried oregano

  • Salt & black pepper

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Rub chicken with olive oil, oregano, salt, pepper, and lemon juice.

  3. Bake 22–25 minutes or until internal temp reaches 165°F.

  4. Rest 5 minutes, slice thin.

  5. Divide spinach, tomatoes, cucumber, and onion into 4 containers.

  6. Top each with sliced chicken.
