Mediterranean Chicken Power Bowls

Ingredients
2 lbs boneless skinless chicken breast
4 cups fresh spinach
1 cup cherry tomatoes, halved
1 large cucumber, diced
½ small red onion, thinly sliced
1 tbsp olive oil
Juice of 1 lemon
1 tsp dried oregano
Salt & black pepper
Instructions
Preheat oven to 400°F (200°C).
Rub chicken with olive oil, oregano, salt, pepper, and lemon juice.
Bake 22–25 minutes or until internal temp reaches 165°F.
Rest 5 minutes, slice thin.
Divide spinach, tomatoes, cucumber, and onion into 4 containers.
Top each with sliced chicken.
