Tuna & Greek Yogurt Stuffed Bell Peppers

Ingredients

  • 4 cans tuna in water (drained)

  • 1 cup nonfat plain Greek yogurt

  • 1 tbsp Dijon mustard

  • 2 celery stalks, finely diced

  • 2 large bell peppers, halved and seeded

  • Salt & black pepper

Instructions

  1. In a bowl, mix tuna, Greek yogurt, mustard, celery, salt, and pepper.

  2. Slice bell peppers into halves or large strips.

  3. Spoon tuna mixture evenly into pepper halves.

  4. Store in airtight containers up to 4 days.
