Turkey & Egg White Protein Muffins

Ingredients

  • 2 cups liquid egg whites

  • 3 whole eggs

  • 1 lb 99% lean ground turkey (cooked)

  • 1 cup spinach, chopped

  • ½ cup diced bell pepper

  • ½ tsp onion powder

  • Salt & pepper

  • Nonstick spray

Instructions

  1. Preheat oven to 375°F (190°C). Spray muffin tin.

  2. Brown turkey in skillet 6–8 minutes. Cool slightly.

  3. Whisk egg whites and whole eggs together.

  4. Stir in turkey, spinach, bell pepper, and seasonings.

  5. Pour into muffin cups (¾ full).

  6. Bake 18–22 minutes until set.

  7. Cool before storing.
