Garlic Lime Shrimp & Cauliflower Rice

Ingredients

  • 2 lbs raw shrimp (peeled & deveined)

  • 4 cups cauliflower rice

  • 1 zucchini, diced

  • 1 cup cherry tomatoes, halved

  • 1 tbsp olive oil

  • 3 cloves garlic, minced

  • Juice of 1 lime

  • 1 tsp paprika

  • Salt & pepper

Instructions

  1. Heat olive oil in skillet over medium heat.

  2. Add garlic; cook 30 seconds.

  3. Add shrimp, paprika, salt, and pepper. Cook 2–3 minutes per side. Remove and set aside.

  4. In same skillet, sauté zucchini and cauliflower rice 5–6 minutes.

  5. Return shrimp to pan, squeeze lime over mixture, toss gently.

  6. Divide into 4 containers and top with fresh tomatoes.
