Egg White, Turkey & Spinach Breakfast Bake

Ingredients

  • 3 cups liquid egg whites

  • 1 lb 99% lean ground turkey

  • 2 cups fresh spinach, chopped

  • 1 red bell pepper, diced

  • ½ cup diced onion

  • 1 tsp garlic powder

  • Salt & black pepper

  • Nonstick spray

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13 baking dish.

  2. Brown ground turkey in a skillet (6–8 minutes). Season with garlic powder, salt, and pepper.

  3. Stir in onion and bell pepper; cook 2–3 minutes.

  4. Add spinach and cook until wilted.

  5. Spread mixture evenly in baking dish.

  6. Pour egg whites over top.

  7. Bake 22–25 minutes until set.

  8. Cool slightly and slice into 4 portions.
