High-Protein Veggie Scramble Bowls

Ingredients

  • 2 cups liquid egg whites

  • 4 whole eggs

  • 1 lb cooked diced chicken breast

  • 1 cup mushrooms, sliced

  • 1 cup zucchini, diced

  • 2 cups spinach

  • 1 tbsp olive oil

  • Salt & pepper

Instructions

  1. Heat olive oil in large skillet over medium heat.

  2. Sauté mushrooms and zucchini 3–4 minutes.

  3. Add spinach; cook until wilted.

  4. Stir in cooked chicken and heat through.

  5. Whisk egg whites and whole eggs together.

  6. Pour into skillet and scramble until fully cooked.

  7. Divide into 4 meal prep containers.
