High-Protein Veggie Scramble Bowls

Ingredients
2 cups liquid egg whites
4 whole eggs
1 lb cooked diced chicken breast
1 cup mushrooms, sliced
1 cup zucchini, diced
2 cups spinach
1 tbsp olive oil
Salt & pepper
Instructions
Heat olive oil in large skillet over medium heat.
Sauté mushrooms and zucchini 3–4 minutes.
Add spinach; cook until wilted.
Stir in cooked chicken and heat through.
Whisk egg whites and whole eggs together.
Pour into skillet and scramble until fully cooked.
Divide into 4 meal prep containers.
