Herb-Grilled Chicken with Roasted Zucchini & Spinach

Ingredients
4 boneless skinless chicken breasts (5 oz each)
3 medium zucchinis (sliced)
4 cups fresh spinach
2 tsp olive oil (not tbsp — keeps fat moderate)
3 cloves garlic (minced)
Italian seasoning
Salt & pepper
Lemon juice (optional)
Instructions
Preheat oven to 400°F.
Toss zucchini with 1 tsp olive oil, salt, pepper. Roast 18–20 minutes.
Season chicken with Italian seasoning, salt, pepper.
Grill or pan-sear chicken 5–6 minutes per side (165°F internal temp).
Sauté spinach in pan with garlic (1–2 minutes).
Portion into containers: protein first, veggies second.
