Herb-Grilled Chicken with Roasted Zucchini & Spinach

Ingredients

  • 4 boneless skinless chicken breasts (5 oz each)

  • 3 medium zucchinis (sliced)

  • 4 cups fresh spinach

  • 2 tsp olive oil (not tbsp — keeps fat moderate)

  • 3 cloves garlic (minced)

  • Italian seasoning

  • Salt & pepper

  • Lemon juice (optional)

Instructions

  1. Preheat oven to 400°F.

  2. Toss zucchini with 1 tsp olive oil, salt, pepper. Roast 18–20 minutes.

  3. Season chicken with Italian seasoning, salt, pepper.

  4. Grill or pan-sear chicken 5–6 minutes per side (165°F internal temp).

  5. Sauté spinach in pan with garlic (1–2 minutes).

  6. Portion into containers: protein first, veggies second.
