High-Protein Creamy Chicken & Spinach Skillet (One Pan)

Ingredients (serves 4)

  • 4 thin chicken breasts (or 2 large butterflied)

  • 2 cups fresh spinach

  • 3 cloves garlic, minced

  • 1 cup chicken broth

  • ¾ cup heavy cream (or half and half)

  • ½ cup freshly grated parmesan

  • 1 tbsp olive oil

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

👩‍🍳 Instructions

  1. Season chicken with salt, pepper, and Italian seasoning.

  2. Heat olive oil in a large skillet over medium heat. Sear chicken 4 to 5 minutes per side until golden. Remove and set aside.

  3. In the same pan, add garlic and sauté 30 seconds.

  4. Pour in chicken broth and scrape up the browned bits.

  5. Stir in cream and parmesan. Simmer 3 to 4 minutes until slightly thickened.

  6. Add spinach and let it wilt.

  7. Return chicken to the skillet. Simmer 5 to 7 minutes until cooked through and coated in sauce.
