Balsamic Steak & Roasted Brussels Sprouts

Ingredients

  • 2 lbs flank steak (trimmed of visible fat)

  • 5 cups Brussels sprouts, halved

  • 1 tbsp olive oil

  • 2 tbsp balsamic vinegar

  • 3 cloves garlic, minced

  • 1 tsp dried thyme

  • Salt & black pepper

Instructions

  1. Preheat oven to 425°F (220°C).

  2. Toss Brussels sprouts with olive oil, salt, and pepper. Spread on sheet pan.

  3. Roast 20–25 minutes until caramelized.

  4. Season steak with salt, pepper, thyme, and garlic.

  5. Sear in a hot skillet 4–5 minutes per side (medium).

  6. Rest 5 minutes, slice thin against the grain.

  7. Drizzle balsamic vinegar over steak before portioning.
